Spanish Rice - cooking recipe

Ingredients
    2 1/2 c. cooked rice
    2 slices bacon, cut up
    1 clove garlic
    1/2 lb. ground beef or turkey
    1/4 c. diced celery
    1 lb. can tomatoes
    1 tsp. salt
    1/4 tsp. pepper
    1/2 tsp. paprika
    1 tsp. chopped parsley
    1 bay leaf (optional)
    pinch of marjoram
    1/3 c. chopped green pepper
    1/4 c. chopped mushrooms
    1 c. thinly sliced onions (optional)
    1 c. diced Cheddar cheese
Preparation
    Fry bacon, garlic, ground beef and celery until lightly browned.
    Add tomatoes and seasonings.
    Bring to a boil, then lower heat and simmer gently for 1/2 hour.
    Remove bay leaf and garlic.
    Combine tomato mixture with the rice, green pepper, mushrooms and onions.
    Bake in moderate oven (350\u00b0) for 1 hour. About 10 minutes before removing from oven, scatter the diced cheese on top.
