Red Snapper And Rice Dinner - cooking recipe

Ingredients
    1 (6.25 oz.) pkg. quick-cooking long grain and wild rice mix
    1 3/4 c. water
    1/4 c. dry white wine
    1 (16 oz.) pkg. frozen cut broccoli spears
    2 carrots, peeled and shredded
    juice and grated zest of 1 lemon
    1 lb. red snapper fillets
    1/4 c. chopped parsley
Preparation
    In a 10 or 12-inch skillet, combine contents of rice and seasoning packets from rice mix, water, wine, broccoli, carrots and half the lemon zest.
    Heat to boiling over high
    heat, stirring often; boil 1 minute.
    Spread evenly in skillet.
    Place snapper in a single layer on top of rice.
    Sprinkle with remaining lemon zest and half the lemon juice.
    Reduce heat to medium-low. Cover and simmer 15 minutes or until snapper flakes easily and rice is tender.
    Sprinkle with remaining lemon juice and parsley.
