Seven Minute Frosting - cooking recipe
Ingredients

1 1/2 c. sugar
1/4 tsp. cream of tartar
1/8 tsp. salt
2 egg whites
2 tsp. vanilla
Preparation

Mix sugar, cream of tartar, salt, egg whites and 1/4 cup water in a pot or bowl over simmering water.
Beat steadily over low heat with mixer until the frosting stands in peaks, about 5 to 7 minutes (no more).
Remove from the heat and continue to beat until thick enough to spread.
Add the vanilla before spreading. Makes about 2 cups; enough to fill and frost an 8 or 9-inch (2-layer) cake.
