Green Tomato Pickles - cooking recipe

Ingredients
    1 gal. green tomatoes, coarsely chopped
    1 c. bell peppers (some red), coarsely chopped
    1 c. onion, coarsely chopped
    1/2 c. jalapeno, finely chopped
    2 c. vinegar
    2 c. sugar
    1 tsp. powdered alum
Preparation
    Chop vegetables.
    Pour 1 cup salt over them and allow to stand 30 minutes.
    Rinse well with cold water.
    Hang in a cloth bag (an old pillow case works well) outside to drain for 2 to 4 hours. Combine vinegar, sugar and alum.
    Bring to a boil.
    Add vegetable mix.
    Bring to a boil and cook for 10 minutes.
    Makes 6 to 7 pints.
