Red Beans And Rice - cooking recipe

Ingredients
    1 bag dried red beans
    1 pkg. Smokey Hollow beef sausage, sliced
    1 onion, chopped
    1 bell pepper, chopped
    1 clove garlic, crushed
    dash of Tabasco
    1/2 tsp. sugar
    1 (8 oz.) can tomato sauce
    1 large can stewed tomato
    salt and pepper to taste

Preparation
    Soak beans by directions on bag.
    Place beans, onion, bell pepper, garlic, sausage and enough water to fill pot about halfway.
    Cook slowly for three to four hours, stirring often. Add remaining ingredients and cook until beans are tender.
    You may need to add water as necessary to keep beans from sticking. After beans have become tender, let the water cook down to sauce consistency.
    This may be prepared in advance and is better the second day.
    Serve over hot cooked rice.

    8 servings.
