Eggplant Maurice - cooking recipe
Ingredients

1 medium eggplant, peeled and cubed
1 1/2 cans tomatoes, drained
1/2 chopped green pepper
1/2 medium onion, chopped
1/2 lb. Cheddar cheese, shredded
1 Tbsp. sugar
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic salt
Preparation

Mix together sugar, salt, pepper and garlic salt; set aside. Place layer of eggplant in a greased casserole.
Add layer of tomatoes and some of the chopped green pepper and onion.
Add layer of cheese.
Repeat layers until casserole is filled, ending with the cheese.
Cover and bake in preheated 400\u00b0 oven for 20 minutes. Uncover, reduce heat to 350\u00b0 and continue baking for another 30 minutes.
Serves 6.
