Lemon Relish - cooking recipe
Ingredients

6 thin-skinned lemons
boiling water
1 tsp. ground sage
1 1/2 c. sugar
Preparation

Trim rind from two lemons and cut into fine strips.
Cover with boiling water in a small bowl.
Drain, reserving lemon water. Cut peel and white membrane from all lemons and cut them into thin slices, removing all seeds.
Place slices in a glass bowl. Mix sage, sugar and one cup reserved lemon water in a small saucepan.
Bring to a boil and boil 4 minutes or until thick.
Add reserved lemon strips to the pan and pour the sauce over the lemon slices.
Cover and chill.
Good with fowl or pork.
Makes 2 2/3 cups.
