Szechwan Chicken With Spicy Peanut Sauce - cooking recipe
Ingredients

1 1/2 lb. chicken breasts, cut in small pieces
1 green onion, cut in half (including top)
1 quarter size slice fresh ginger, crushed
1 Tbsp. dry sherry
1/2 tsp. each: salt and sugar
1 c. water
Spicy Peanut Sauce (recipe follows)
1 to 3 c. shredded lettuce
Preparation

Place chicken in a 2-quart pan with onion, ginger, sherry, salt, sugar and water.
Bring to a boil over high heat, then cover.
Reduce heat and simmer until meat is done (about 20 minutes).
Meanwhile, prepare Peanut Sauce and place lettuce on individual plates.
When Peanut Sauce is ready, place chicken on lettuce and drizzle on Peanut Sauce.
