Confetti Scalloped Potatoes - cooking recipe

Ingredients
    1/2 c. margarine
    1/2 c. onion, chopped
    1 (16 oz.) pkg. frozen hash brown potatoes
    1 can cream of mushroom soup
    1 soup can of milk
    1 c. Cheddar cheese, shredded
    1 sm. green pepper, cut into thin strips
    2 Tbsp. pimento, chopped
    dash of pepper
    1 c. Ritz cracker crumbs, divided
Preparation
    Melt margarine in a skillet over medium heat.
    Saute onion until tender.
    Stir in potatoes, soup and milk.
    Add cheese, green pepper, pimento, pepper and 1/2 of the crumbs.
    Pour into a 9 x 13 casserole dish and top with remaining crumbs.
    Bake at 375\u00b0 for 35-40 minutes.
    Yields 6-8 hearty servings.
