Old-Fashioned Vegetable Soup - cooking recipe

Ingredients
    3 lb. beef shanks, cracked
    1 qt. water
    1 bay leaf
    5 peppercorns
    1 c. sliced carrots
    1/2 c. chopped celery
    1 medium onion, chopped (1/2 c.)
    1 can tomatoes
    1 tsp. salt
    1/4 tsp. marjoram leaves
    1/4 tsp. thyme leaves
Preparation
    Cover shanks with
    water, heat to boiling, add bay leaf and peppercorns.
    Reduce
    heat.
    Cover\tand simmer 1 3/4 hours or until tender.
    Remove
    meat
    from
    the
    stock
    and cut into 1/2-inch cubes.
    Strain
    stock
    into large saucepan.
    Add meat and remaining ingredients.
    Heat to boiling.
    Cover and simmer for 20 minutes
    or until carrots are tender.
    Makes 8 servings (1 cup each).
