Italian Sausage And Zucchini - cooking recipe
Ingredients

1/4 c. oil
5 to 6 green peppers
1/2 tsp. salt and pepper
crushed basil
1/2 tsp. garlic salt or powder
1 medium onion, diced
1 zucchini, quartered and sliced
1/2 or 1 tsp. oregano
1 or 1 1/4 lb. mild Italian sausage, cut up
Preparation

In large skillet or Dutch oven, put 1/4 cup oil, 1 medium onion (diced), green peppers, zucchini, salt, pepper, basil, oregano and garlic.
Simmer until all ingredients are fairly tender.
Add about 6 nice tomatoes (scaled and quartered) and 1 can mushroom pieces. Cook until it becomes a thick sauce.
Add more tomatoes as it cooks down.
Cut up Italian sausage.
Boil off in water and add to sauce. Cook about 10 to 15 minutes longer.
You can serve this as is or over rice or noodles.
