Potatoes In Orange Shells - cooking recipe

Ingredients
    8 large sweet potatoes or yams (about 6 lb.)
    boiling water
    2 tsp. salt
    4 Tbsp. light brown sugar
    2 tsp. grated orange peel
    1/4 c. orange juice
    1/4 c. butter or margarine
    1/2 tsp. nutmeg
    2 c. white sugar
    12 oranges
    2 Tbsp. vanilla
    1 pkg. marshmallows
Preparation
    Wash yams.
    Place in large saucepan.
    Cover with boiling water. Add 1 teaspoon salt.
    Bring to boiling; reduce heat and simmer, covered, 35 to 40 minutes or until tender.
    Drain potatoes; let cool.
    Peel.
    Meanwhile, preheat oven to 350\u00b0.
    Remove pulp from oranges (could use a grapefruit knife).
    To potatoes, add sugars, orange peel, orange juice, margarine, nutmeg and vanilla.
    Pile in orange halves.
    (For a decorative touch you might cut a zigzag design in top edge of orange shell with kitchen scissors.)
    Pile in orange halves.
    Warm potatoes in oven.
    Put a marshmallow on each orange half and heat until brown.
