Mexican Chicken - cooking recipe

Ingredients
    1 pkg. boneless chicken breasts, cubed
    1 tomato, chopped
    1 small green onion, chopped
    1 to 2 small pickled jalapeno peppers, chopped finely
    1 to 2 cloves garlic (minced or crushed)
    olive oil
    salt and pepper to taste
Preparation
    Heat some olive oil in large frypan.
    Saute garlic and onion until tender.
    Add tomato and pepper and saute a few minutes longer on medium-low heat.
    Remove from pan and reserve juice and all. If necessary, add more oil to pan.
    Add chicken, salt and pepper; saute until cooked through and golden brown.
    Add vegetable mixture back to pan.
    Stir together with chicken and heat through. Serve with rice.
