Chef Tell'S Spinach Stuffed Pork Chops - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen chopped spinach
    1/4 c. water
    2 Tbsp. butter or margarine
    2 anchovies, chopped
    salt
    pepper
    1/2 c. chopped onion
    1/2 c. sliced fresh mushrooms
    1 tsp. Dijon mustard
    1/4 c. red wine
    1/4 c. chicken stock
    2 pork loin chops, with pocket (about 3/4-inch thick)
    salt
    flour
    1 Tbsp. butter or margarine
Preparation
    In an all-purpose casserole, combine spinach and water; cover. Place on Micro-Go-Round in microwave oven.
    Microwave at High for 5 to 6 minutes, breaking up spinach frequently.
    Drain spinach; remove from casserole.
    Place 2 tablespoons butter in casserole. Microwave uncovered at High for 30 seconds, or until butter melts. Add anchovies; microwave at High for 1 minute.
    Stir in spinach, salt and pepper.
    Microwave at High for 2 or 2 1/2 minutes or until heated through.
    Remove spinach mixture from casserole; set aside.
