Spiced Chicken With Fruit - cooking recipe
Ingredients

1 Tbsp. vegetable oil
1/4 tsp. cayenne pepper
1 1/2 lb. chicken pieces or 3 lb. cut-up frying chicken
1/2 c. pineapple chunks
1/3 c. raisins
1/2 c. pineapple or orange juice
1/8 tsp. ground cinnamon
1/8 tsp. ground cloves
orange sections
parsley
Preparation

Heat oil in skillet until hot. Mix salt and red pepper. Sprinkle on chicken. Cook chicken in oil over medium heat 15 to 20 minutes or until light brown. Stir in remaining ingredients, except orange sections and parsley. Heat until boiling; reduce heat. Cover and simmer 20 to 25 minutes or until juices of chicken run clear. Garnish with orange sections and parsley.
