Cheese And Onion Potatoes - cooking recipe

Ingredients
    1/4 c. butter or margarine
    4 medium unpeeled red potatoes, sliced 1/4 inch thick
    2 Tbsp. dried minced onion
    pepper to taste
    1/3 c. shredded Cheddar cheese
    chopped fresh parsley
Preparation
    In a skillet, melt butter or magarine over medium-high heat. Add potatoes, onion and pepper.
    Cover and cook, stirring occasionally, until potatoes are tender, about 10 minutes. Uncover, cook until potatoes are browned, about 5 to 7 minutes. Top with cheese.
    Cover and remove from heat.
    Let stand for several minutes.
    Sprinkle with parsley before serving.
    Yields 4 servings.
