Potato Candy - cooking recipe

Ingredients
    1 small potato
    1 box powdered sugar
    1 tsp. vanilla
    peanut butter
Preparation
    Wash, then boil potato in jacket.
    When done, peel and mash in bowl with a stiff fork.
    Add the sifted powdered sugar a little at a time.
    Add vanilla.
    Continue adding sugar until you have a very stiff dough. Roll out on wax paper that's sprinkled with powdered sugar.
    May have to sprinkle dough so you can roll it out.
    Then spread peanut butter on and roll jelly roll style.
    Slice and ready to eat.
    This is rich.
    You may use sweet potato instead of Irish.
