Pickled Beets - cooking recipe

Ingredients
    3 lb. small whole beets
    1 c. water
    1 tsp. whole allspice
    3-inch stick cinnamon
    2 c. vinegar
    1/2 c. sugar
    6 whole cloves
Preparation
    Wash beets, leaving on root and 1-inch of tops.
    Cover beets with boiling water; simmer for 25 minutes.
    Drain.
    Slip off skins and trim beets.
    In large kettle combine vinegar, water, and sugar.
    Add spices and bring to a boil.
    Simmer 15 minutes.
    Pack beets in hot jars leaving 1/2-inch headspace.
    Cover beets with hot liquid.
    Put on hot lids and seal.
    If lids don't seal in 15 minutes, hot bath jars.
