Carrot And Potato Soup - cooking recipe

Ingredients
    2 Tbsp. butter
    1 small onion, chopped
    4 c. cubed potatoes
    3 c. sliced carrots
    6 c. chicken broth
    salt to taste
    1/8 tsp. white pepper
    2 c. half and half or milk
Preparation
    Serve hot or cold.
    Melt butter in large saucepan, cook onion several minutes.
    Add potatoes, carrots, salt and pepper and broth. Bring to a boil.
    Reduce heat; simmer for 30 minutes until vegetables are done.
    Puree in blender.
    Return to pan.
    Add milk and heat to serving temperature if desired.
    Garnish with shredded carrots.
    Makes 8 servings.
