Orange Rice Pudding(4 Servings) - cooking recipe

Ingredients
    1/2 orange
    2 c. milk, scalded
    1/4 c. long grain rice
    1/4 c. sugar
    1/4 tsp. salt
    1/2 c. light cream
    1 slightly beaten egg yolk
    1/4 tsp. vanilla
Preparation
    Carefully peel orange so peel is in one continuous spiral. Combine peel, milk, sugar, rice and salt in top of double boiler. Cover and cook over (not not touching) gentle boiling water until rice is tender (about 45 minutes).
    Stir occasionally during first part of cooking.
    Remove peel.
    Combine egg yolk and cream.
    Stir a small amount of hot mixture into yolk mixture.
    Return to hot mixture and blend thoroughly.
    Continue cooking (covered) until it thickens (about 45 minutes), stirring occasionally.
    Stir in vanilla.
    Top servings with a sprinkle of sugar and cinnamon or whipped cream
