Oven-Fried Chicken - cooking recipe
Ingredients

1/4 c. shortening
1 1/2 c. Potato Buds mashed potatoes (dry)
1/3 c. grated Parmesan cheese
1 tsp. salt
1/2 tsp. pepper
1 egg, beaten
2 1/2 to 3 lb. cut-up chicken
Preparation

Preheat oven to 425\u00b0.
Heat shortening in baking pan (13 x 9 x 2-inches) in oven until melted.
Mix potatoes, cheese, salt and pepper.
Dip chicken into egg.
Roll in potato mixture.
Place chicken pieces, skin side down, in pan.
Bake until thickest pieces are done, about 1 hour.
Serves 4.
