Tabouli - cooking recipe

Ingredients
    1 (15 oz.) can chickpeas
    1 1/4 c. bulgur wheat
    4 c. boiling water
    1 1/2 c. parsley
    3/4 c. mint
    3 medium tomatoes
    3/4 c. lemon juice
    1/4 c. olive oil
    1/4 c. chopped Vidalia onion
    1 tsp. salt
Preparation
    Pour boiling water over bulgur.
    Let stand 2 hours.
    Put in colander.
    Top with plate to drain.
    Put lemon juice and olive oil in blender.
    Blend in parsley and mint.
    Chop tomatoes and onion. Mix all ingredients and chill.
    Keeps well overnight.
