Celery Gravy - cooking recipe

Ingredients
    1 c. diced celery
    3 Tbsp. flour
    1 Tbsp. minced onion
    salt
    pepper
    1 c. boiling water
    2 1/2 c. scalded milk
    3 Tbsp. butter
Preparation
    Lightly brown onion in butter.
    In separate pan, combine water and celery and simmer until tender.
    When onion is tender, add flour.
    Mix until smooth.
    Add milk slowly, stirring constantly. Add celery and water.
    Season to taste and heat thoroughly.
    This is great for turkey dressing.
