Ingredients

1 c. cider vinegar
1 c. water
Up to 3 Tbsp. brown sugar
1 tsp. salt
1 tsp. whole peppercorns
1/2 tsp. whole cloves (optional)
4 medium red onions, very thinly sliced
Preparation

Preliminary: Fill a teakettle with water and bring to a boil. Combine vinegar, water, sugar, salt and peppercorns in a medium-sized bowl and stir until the sugar is dissolved. Place onion slices in a colander in the sink and slowly pour all the boiling water over them. They will wilt slightly. Drain well and transfer to the bowl of marinade.
