Stuffed Celery - cooking recipe

Ingredients
    1 bunch celery
    1 (8 oz.) pkg. cream cheese, softened
    1/2 c. chopped walnuts or pecans
    20 green or Spanish olives, chopped coarsely
    2 Tbsp. sour cream
    1 can black-eyed peas or black beans, drained
    1 can Shoe Peg corn, drained
    1 medium jar chopped pimento, drained
    1 large bell pepper, chopped (in season, you can use red, yellow and orange peppers)
    1 avocado, chopped
Preparation
    Can be eaten as a dip with tortilla chips or can be used as a salad or cold side dish.
