Senate Bean Soup(1872) - cooking recipe

Ingredients
    3 c. dry navy beans
    1 ham bone
    3/4 tsp. celery salt
    1/3 tsp. dry mustard
    4 1/2 c. water
    1 1/2 lb. smoked pork
    1 1/2 Tbsp. minced onion
    salt and pepper to taste
    chopped parsley
Preparation
    Soak beans in water to cover overnight. Drain. Add the water, ham bone, pork, celery salt and onion. Cook beans until very soft. Remove bone and pork. Dice the meat.
    Press the remaining bean mixture through coarse colander or cream thoroughly with wooden spoon.
    Combine with meat, adding the mustard, salt and pepper. Heat to boiling, stirring. Garnish with parsley.
    Makes 8 to 10 servings.
