Fruit Cake Muffins - cooking recipe
Ingredients

1 1/2 c. flour
1/4 c. brown sugar
1 Tbsp. baking powder
1/4 tsp. salt
1 egg, slightly beaten
1/2 c. milk
4 Tbsp. unsalted butter, melted
1/2 c. diced red and green candied cherries
1/2 c. mixed diced candied pineapple
1/2 c. seedless raisins
2 tsp. grated lemon peel
2 tsp. grated orange peel
Preparation

Preheat oven to 400\u00b0. In mixing bowl, stir together the flour, sugar, baking powder and salt.
In a separate bowl stir together the egg, milk and butter, then stir them into the dry ingredients to make a lumpy batter.
Fold in remaining ingredients.
Spoon the
batter
into greased muffin tins, filling them about 2/3 full. Bake 25 to 30 minutes.
Makes 12 muffins.
