Eggplant Parmesan - cooking recipe

Ingredients
    1/4 c. Parmesan
    2 to 3 small eggplants, peeled and cut into 1/2-inch slices
    4 oz. pkg. grated Mozzarella cheese
    1/2 c. white cornmeal
    1 stick margarine, melted
    1 c. marinara sauce
Preparation
    Preheat oven to 400\u00b0.
    Mix Parmesan cheese and corn meal. Dip eggplant in melted margarine.
    Roll in cornmeal mixture. Place in buttered casserole dish.
    Cover with marinara sauce.
    Top with Mozzarella cheese and bake for 15 to 20 minutes.
    Makes 6 servings.
