Eggplant Parmesan - cooking recipe

Ingredients
    pepper and salt
    1 eggplant
    1 egg, beaten
    1 c. bread crumbs
    olive oil
    1 jar bottled spaghetti sauce
    grated Mozzarella cheese
    Parmesan cheese
Preparation
    Peel eggplant and slice into 1/4-inch pieces.
    Salt and pepper the slices.
    Dip in egg and then in Italian bread crumbs. Fry in olive oil until golden brown; drain in paper towels.
    Cover bottom of baking dish with the spaghetti sauce.
    Place slices of eggplant in the dish; add sauce to cover.
    Sprinkle with grated Mozzarella cheese.
    Bake until cheese is melted at 350\u00b0 (oven temperature).
