1/4 c. butter
1 large onion, chopped
1 c. celery, chopped (chop some tops also)
4 c. potatoes in 1/2-inch cubes
1/4 c. parsley
1/2 tsp. salt
1/4 tsp. pepper
1 qt. chicken stock
3 Tbsp. cornstarch
Preparation

Saute onion and celery in butter until soft.
Add all ingredients except milk and cornstarch.
Cover and cook until potatoes are tender (30 minutes).
Combine cornstarch with milk, then add to soup and cook until hot, but not boiling, stirring frequently.
