Adobo - cooking recipe

Ingredients
    1/2 lb. pork butt or ribs, cut up in 1-inch cubes
    1/2 c. soy sauce
    1/2 c. vinegar
    2 c. water
    1 bay leaf
    1 tsp. crushed ginger root
    3 cloves garlic, crushed
    6 whole peppercorns
    salt and pepper to taste
    1 lb. chicken, cut up
Preparation
    Place all ingredients, except chicken, in a pot and simmer, covered, for 15 minutes.
    Add chicken and simmer for another 15 minutes, until chicken is tender.
    Continue to simmer, uncovered, until liquid is reduced to about 1/4 cup.
    Serve hot over white rice.
