Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dry red beans, soaked overnight
    1 ham hock (omit if restricting fat)
    2 Tbsp. parsley flakes
    2 pods chopped garlic
    1 tsp. red pepper
    1/2 tsp. thyme
    1 1/2 qt. water or beef stock
    1 Tbsp. Worcestershire sauce
    1 (6 oz.) can tomato sauce
    1 bunch green onions, sliced
    salt to taste
    3 dashes Tabasco
    1/4 tsp. oregano
    2 bay leaves
    1 1/2 lb. smoked sausage, cut into bite sized pieces
Preparation
    (A little baking soda added to water the beans are soaking in will de-gas.)
    Drain beans.
    Mix all ingredients in soup pot. Bring to a boil.
    Simmer until beans are tender and desired thickness, at least 1 hour.
    Serve over rice.
