Raisin Pie - cooking recipe
Ingredients

2 c. seedless raisins
2 c. boiling water
1/3 c. granulated sugar
1/3 c. brown sugar
2 1/4 Tbsp. cornstarch or flour
1/8 tsp. salt
2 tsp. grated lemon rind
2 Tbsp. lemon juice
1 Tbsp. orange juice
2 Tbsp. butter or margarine

Preparation

Boil water in saucepan.
Add raisins and simmer until tender (3 to 5 minutes).
Combine sugar, cornstarch and salt; stir into hot raisins.
Cook slowly, stirring constantly, to a full rolling boil.
Boil 1 minute.
Remove from heat.
Blend in lemon rind and juices.
Pour hot filling into pastry-lined pie pan; dot with butter and cover with remaining pastry.
Bake in hot oven (425\u00b0) for 30 to 40 minutes.
Serve warm, plain or with ice cream.
