Porcupine Meat Balls - cooking recipe
Ingredients

1 can chopped meat, cut fine
1/2 c. rice, half cooked
1 tsp. salt
1/8 tsp. pepper
1 small onion, sliced
1/2 green pepper, sliced
1 Tbsp. shortening
2 1/2 c. tomato juice
dash of nutmeg
salt and pepper to taste
Preparation

Combine chopped meat, rice, salt and pepper.
Form into small balls about 1 1/2-inches in diameter.
Place in baking dish.
In a skillet, brown onion and green pepper in shortening.
Add tomato juice, nutmeg and salt and pepper to taste.
Pour over meat balls. Cover baking dish.
Bake in moderate oven at 350\u00b0 for about 1 hour or until rice is very tender.
Makes 8 porcupines.
