Green Rice(Makes 10 Servings) - cooking recipe

Ingredients
    3 c. cooked rice
    1 c. chopped parsley
    1/2 c. grated Cheddar cheese
    1/3 c. chopped onion
    1/4 c. chopped green pepper
    1 clove garlic, minced
    14 1/2 oz. can evaporated milk
    2 eggs, beaten
    1/4 c. vegetable oil
    2 tsp. salt
    juice and grated rind of 1 lemon
Preparation
    Mix rice, parsley, cheese, onion, green pepper and garlic in greased 2-quart casserole. Blend rest of ingredients; mix into rice. Sprinkle with paprika. Bake at 350\u00b0 about 45 minutes or until like a soft custard.
