Potato-Cheese Casserole - cooking recipe

Ingredients
    3 c. cooked, mashed potatoes
    1 egg, separated
    1/2 c. (2 oz.) shredded low-fat process American cheese
    1/2 small green pepper, chopped fine
    1 Tbsp. green onion, chopped fine
    1/2 tsp. celery salt
    1/2 tsp. paprika
    1 egg white
    vegetable cooking spray
Preparation
    Combine potatoes and egg yolk.
    Blend well. Stir in cheese, green pepper, green onion and celery salt.
    Beat 2 egg whites (room temperature) at high speed with mixer until soft peaks are formed. Gently fold whites into potato mixture. Spoon into 1 1/2-quart dish coated with vegetable spray.
    Sprinkle paprika on top. Bake at 375\u00b0 for 25 to 30 minutes.
