Luby'S Fish Batter - cooking recipe

Ingredients
    3 c. yellow corn meal
    1 1/2 c. self-rising flour
    1 tsp. paprika
    1 tsp. salt
Preparation
    Mix together in large flat pan.
    Beat 3 eggs well.
    Add 3 tablespoons water per egg and beat again.
    Coat each fillet in corn meal, then in egg mixture, then in corn meal mixture again. Drop into hot fat.
    Cook until fish is golden brown.
    Sift remaining cornmeal mixture and store in freezer in plastic bag.
