Hoppin' John - cooking recipe

Ingredients
    1/2 lb. dried black-eyed peas
    3 1/2 c. water
    1/4 tsp. fresh hot pepper, chopped
    1/4 slab bacon
    1 onion
    1 c. uncooked long grain rice
    1 tsp. salt and pepper
Preparation
    Heat peas and water to boiling stage in 2 qt. sauce pan; boil 2 minutes. Remove from heat and let stand 1 hour. Cut bacon into 8 pieces. Stir bacon, onion, and hot pepper into peas. Heat to boiling stage; reduce heat. Cover and simmer until peas are tender (1 to 1 1/2 hours). Stir in rice (uncooked), salt and pepper. Cover and simmer, stirring occasionally until rice is tender (about 25 minutes). Stir in additional water if necessary to cook rice.
