Surprise Carrot Cake - cooking recipe

Ingredients
    2 1/4 c. Softasilk cake flour
    1 1/2 c. sugar
    3 eggs
    3/4 c. mayonnaise or salad dressing
    2 tsp. baking soda
    1 (8 oz.) can crushed pineapple in juice (undrained)
    1/2 tsp. salt
    3/4 c. chopped pecans
    1/2 tsp. ground allspice or ginger
    2 c. finely shredded carrots (about 4 medium)
    Cream Cheese Frosting (recipe follows)
Preparation
    Grease and flour 2 round pans (9 x 1 1/2-inch).
    Beat all ingredients except carrots, pecans and frosting in a large bowl on low speed for 30 seconds, scraping bowl constantly.
    Beat on medium speed 3 minutes, scraping bowl occasionally.
    Stir in carrots and pecans.
    Pour into pans.
    Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean; cool 10 minutes.
    Remove from pans; cool layers completely.
