Ingredients

1/4 c. corn starch
1/3 c. sugar
2 c. milk
2 eggs, slightly beaten
2 Tbsp. butter or margarine
1 tsp. vanilla
Preparation

Combine cornstarch and sugar in 2-quart microwave safe mixing bowl.
Using a whisk, add milk gradually to cornstarch and sugar mix.
Place mixture in microwave.
Microwave on high for 5 to 7 minutes or until bubbly and thick, stirring after 2 minute intervals.
Beat 1/2 of the hot mixture into the slightly beaten eggs.
Beat this mixture into the remaining hot mixture. Microwave on high for 1 1/2 to 2 1/2 minutes until thickened and heated throughout, stirring after every 45 seconds of cooking. With whisk, stir in butter and vanilla.
Pour mixture in equal amounts into 4 dishes.
Cover and refrigerate.
