Rice-N-Beans - cooking recipe

Ingredients
    1 c. rice
    2 c. water
    1 Tbsp. oil
    2/3 c. chopped onion
    1 clove garlic, crushed or minced
    2 medium tomatoes, finely chopped
    1 medium zucchini, coarsely chopped
    1/2 tsp. oregano
    16 oz. can kidney beans, drained
    salt and pepper to taste
    grated Cheddar cheese (optional)
Preparation
    Saute onion and garlic in oil until soft.
    (I use olive oil.) Add tomatoes, zucchini and oregano.
    Cover skillet and simmer about 5 minutes or until vegetables are tender-crisp.
    Add the beans and simmer mixture, stirring occasionally, until heated through.
    Season with salt and pepper.
    Serve over hot rice and sprinkle with cheese.
    Serves 4.
