Carotene Rich Minestrone Soup(Heart Healthy) - cooking recipe

Ingredients
    1 Tbsp. red wine
    1/2 c. thickly sliced leek, white and tender
    2 c. water
    1/2 c. cubed new potatoes
    1 can water
    1 bay leaf
    1/4 tsp. oregano
    1/2 tsp. salt
    2 c. shredded escarole or spinach
    2 Tbsp. minced parsley
    grated Parmesan cheese
    1/2 c. thinly sliced onion
    1 (16 oz.) can or 2 c. canned Italian plum tomatoes with juice
    1/2 c. sliced carrots
    1 can Great Northern white beans
    1/2 c. chili mac noodles
    1/4 tsp. thyme
    1/4 tsp. sage
    1/2 freshly ground black pepper
    1 c. broccoli florets
    1/4 c. shredded fresh basil leaves
Preparation
    In soup pot, melt butter with oil.
    Add onion and leek and cook until tender.
    Add tomatoes and 2 cups water.
    Stir in carrots, potatoes, bay leaf, thyme, oregano, sage, salt and pepper.
    Heat to a boil; reduce heat to medium and simmer for 35 minutes.
    Add beans, 1 can water, chili mac noodles, escarole, broccoli, parsley and basil.
    Cook an additional 20 minutes.
