Jalapeno Corn Bread - cooking recipe
Ingredients

1/2 c. whole milk
1/2 c. buttermilk
1 extra large egg
2 Tbsp. salad oil
1 Tbsp. sugar
1/2 tsp. salt
2 tsp. baking powder
1 c. white cornmeal
1/3 c. all-purpose flour
1 1/2 Tbsp. diced red pepper or pimentos, drained
1 1/2 Tbsp. jalapenos, stems remove and chopped
1 1/2 Tbsp. whole kernel corn
Preparation

Whisk together the milk, buttermilk, egg, salad oil, sugar, salt and baking powder.
Add the cornmeal and flour and mix well. Fold in diced red pepper, chopped jalapenos and whole kernel corn. Place in an 8-inch round greased pan or a greased cast-iron skillet and bake at 425\u00b0 for 20 to 25 minutes.
Yield:
6 servings.
