Chicken Dumplings - cooking recipe
Ingredients

1 fresh hen or Sunday roaster
1 Tbsp. salt
6 c. self-rising flour
1 egg
Preparation

Cook hen until tender, removing from broth and debone for serving.
Make up dumplings using flour, salt, egg and enough broth to make dough consistency.
Knead until it holds in a ball. Roll dough thin and cut in strips. Break off into small pieces and drop in boiling broth. Turn down heat while you roll another batch. Continue until all flour mixture is used.
Shake pot periodically (never stir).
Cover and turn to simmer for about 10 minutes.
(Can substitute larger fryer for hen.)
