Baker'S Stew(Alsatian) - cooking recipe

Ingredients
    1 1/2 lb. leg of beef
    1 1/2 lb. boned pork loin
    1 pig's tail (optional)
    1 pig's trotter (optional)
    1 1/2 lb. boned mutton shoulder
    1/2 lb. onions
    2 cloves garlic
    2 leeks (white parts only)
    1/2 litre dry white Alsace wine (Riesling or Sylvander)
    1 bouquet garni (parsley)
    1 sprig thyme
    salt and pepper
    3 bay leaves
    a little powdered cloves
    3 lb. potatoes
Preparation
    You will need an earthenware cooking pot, plus lid.
