Pork Tenderloin Piquant - cooking recipe

Ingredients
    1 1/2 lb. whole pork tenderloin
    1 Tbsp. Dijon mustard
    1/4 c. chicken broth
    1/4 c. lime juice
    1/2 tsp. salt
    1/4 tsp. ground allspice
    1/4 tsp. black pepper
    3 Tbsp. dark brown sugar
Preparation
    Heat oven to 450\u00b0.
    Trim fat from meat, place into a shallow dish, rub all over with mustard.
    Mix together chicken broth, lime juice, salt, allspice and pepper.
    Pour over meat.
    Cover and refrigerate 6 hours.
    Remove meat from marinade, place on a rack in roasting pan, coat with brown sugar.
    Roast at 450\u00b0 for 30 to 35 minutes (internal temperature should be 165\u00b0 to 170\u00b0).
