Make Ahead Mashed Potatoes - cooking recipe

Ingredients
    9 large baking potatoes, peeled and cut in chunks
    12 oz. light cream cheese, at room temperature
    1/2 c. oleo, softened
    1/2 c. sour cream
    pinch of nutmeg
    1/4 tsp. white pepper
    1/2 tsp. salt
Preparation
    Cover potatoes with water and bring to boil.
    Reduce to medium heat and simmer until tender.
    Drain and place in a mixing bowl; beat potatoes with mixer until fluffy.
    Cut cream cheese into small pieces and beat in with the oleo.
    Beat in sour cream and seasonings.
    Scrape into buttered casserole dish.
    Cover with plastic wrap.
    Refrigerate.
    Bring to room temperature.
    Reheat at 300\u00b0, uncovered, for about 20 minutes.
    Makes 8 servings.
