Pickled Mushrooms - cooking recipe

Ingredients
    1/3 c. red wine vinegar
    1/3 c. salad oil
    1 tsp. salt
    2 tsp. dried parsley flakes
    1 tsp. prepared mustard
    1 Tbsp. brown sugar
    2 small onions, thinly sliced in rings
    2 (8 oz.) cans mushroom caps, drained
Preparation
    In small saucepan, combine all ingredients except mushrooms. Bring to a boil.
    Add mushrooms.
    Simmer 5 to 6 minutes.
    Place in bowl, cover and let stand overnight.
    Stir occasionally.
    Drain to serve.
    Best if made 2 days ahead.
