Squash And Green Chili Casserole - cooking recipe

Ingredients
    2 lb. yellow squash, sliced
    4 Tbsp. butter
    2 eggs, beaten
    1 (4 oz.) can chopped green chilies, mild
    1 (8 oz.) jar sharp processed cheese
    1 medium onion, sliced
    salt and pepper to taste
Preparation
    Cook squash and onion in water until tender.
    Drain and mash. Season with butter, salt and pepper. Pour into large bowl.
    Add drained chilies and eggs.
    Butter a 2-quart shallow casserole dish.
    Cover bottom with cheese. Spread squash mixture on top. Bake at 325\u00b0 for 1 hour in pan of hot water. Ten minutes before taking out of oven, poke 4 holes in mixture so cheese will rise.
