Puree Of Onion And Potato Soup - cooking recipe

Ingredients
    new potatoes to yield approximately 4 c., diced
    3 medium onions (approximately 1 1/2 c.)
    2 Tbsp. butter, divided
    3 c. hot water
    2 tsp. salt
    3 c. hot milk
    chives (optional garnish)
    salt and pepper
Preparation
    Dice onions to about 1/3-inch size.
    Put 1 tablespoon butter in a large kettle.
    Add onions and cook, covered, over low heat, until tender, but not brown.
    Stir occasionally.
